Temp defaults to 195. Each time you unplug you must reset temp. In addition to one in the kitchen for tea and Americano espressos each morning, I also use one in the bathroom for hot water for my face washing each night. I dispense the hot steamy water on my wash cloth and don't have to waste gallons of water in an effort to get the tap water to heat up, just to get a hot wash cloth.
