Chopping and slicing vegetables or fruit is it's great quality. Plenty of weight and the large blade allow slicing through even the toughest of the tough. The long blade has a great rocking action for those chopping jobs. It's the knife I needed but never bought...till now. I now feel like I control the knife and the results. Very happy.

I took a course on knife skills taught by the famous Norman Weinstein. He said this is the perfect chef's knife.

I couldn't agree more. It's a bit heavier than others, but that's a good thing. It's well balanced, so easy to handle. And the weight helps the cutting. Almost like the knife does it all on its own.

I do recommend reading Weinstein's book or taking a knife skills course to learn how to properly handle a knife this great.
